Brook's cooking dinner tonight.

Well, I made dinner for my family the other night because I try to be a good daughter and wife and do these kinds of things.. I love how everyone is like "Brook's cooking tonight, come home hungry" and then just sit and wait on me to make them dinner.. I must admit my husband does help out to the best of his abilities.
I made Chicken Tenders, Loaded mashed potatoes and honey crescent rolls for dinner with an Apple bunt cake for dessert.So let's just get to it! The Chicken Tenders










What You Need
Chicken (Breast or tenders, if you pick breast you must cut them into 1/2 inch strip)
1 Container Sour Cream
(Dash)Salt
(Dash)Pepper
3 Tbs Worcestershire
1 Tbs Lemon Juice
Mrs. Dash (and or other seasonings of your choice)
1/2 TBS Minced Garlic
Bread Crumbs (Original or Italian)
Cooking Spray (Or other means of how you'd like to grease your pan)
Ranch & (or) Honey Mustard

How To?

Mix together One Container Sour Cream,Salt,Pepper, Minced Garlic and Seasonings (Mrs. Dash is pretty good, as well as accent and other spices-- Add as desired, don't over do it though!)

Set Aside

Trim and tenderize the chicken strips, place in the mixture and make sure the chicken is covered in the mixture by folding the chicken into it. Cover and refrigerate over night, or at least for a few hours (the longer the better! No more than 24 hours.. because i've never tried.)

Pre*Heat oven to 350 degrees

Now pour bread crumbs into the bowl add seasoning if you wish, or use Italian..

Take chicken out *I use t
ongs, because it builds on your fingers* and place in bowl with bread crumbs making sure chicken is covered and place onto greased cookie sheet.

Bake Chicken for 40 minutes.

Serve with Honey Mustard or Ranch because it taste best!




Next, Loaded mashed potatoes. I forgot to take a finished picture!

What you need?
6 Peeled Potatoes
2 cups cheddar cheese
1 cup Colby Jac

1 Pack, Jar *whatever you buy* Real Bacon Bits
1 Cup Sour Cream
1/2 Cup Milk
3 TBS butter
Med Casserole dish

What to do?

Pre heat oven to 350

You need to peel, boil and mash the potatoes like you normally do to make mashed potatoes.

Then, like usual, add 1/2 cup milk and use mixer to mix.
(if you think they need to be creamier add more milk it really depends on your potatoes.)

Now, add the butter, 1/2 the bacon bits, cheddar cheese, sour cream and mix again.

Place the potatoes into
the casserole dish, place Colby jacky cheese on top and remaning bacon bits.

Leave in oven for 20 minutes, or until cheese is melted.

Change it up with your favorite cheeses! Swiss? Smoked Cheddar?



Next... Apple Cake..







What do you need?
1 Box Yellow Cake Mix (Follow as directed, need ingredients as directed)
1 box instant pudding mix
3 Granny Smith Apples
Cooking Spray
Nut Meg
Cinnamon
Carmel Sauce
Powdered Sugar

What to do?

Pre heat oven to 350 degrees, or as cake mix instructs.

Peel 3 granny smith apples

I used a sliced and sliced them very thin, and then chopped them finely.. You can choose to grate them, or chop them depending on how you would like it.

Mix cake mix as directed, adding the 1 pack of pudding mix and Cinnamon and nutmeg, add as much as you think you would like, I did about 2 tablespoons of cinnamon, 1 nutmeg.

Fold in the apple pieces

Bake in a bunt pan as the box directs, checking with a toothpick to make sure the cake is finished.

Allow cake to cool

Now mix powdered sugar and cinnamon together, a good rule of thumb for this is as much powdered sugar as cinnamon.. 1/4 cup powdered sugar, 1/4 cup cinnamon, mix together with spoon and sprinkle on cake (cooled)

Now Serve and add carmel sauce, sunday topping is what I used on top of the cake.. (I didn't add directly on the cake because I was afraid it would make it soggy.)


Well I hope you all enjoy, the cake I couldn't exactly put my finger on but I wasn't too crazy about it.. However it's gone and my family really enjoyed it.
